After the rather unexpected success of our first commercial bottlings, which sold out within a matter of hours in major retailers across Europe, we have brought forward four new whisky bottlings to meet demand.

THE PRECISION OF PLACE

The debut of two entirely new Single Farm Origins editions are:

 

BALLYMORGAN: EDITION 1.1

Overture barley grown by Robert Milne on one of Ireland’s premier malting barley terroirs – the famous Clonroche Series in Co. Wexford – one hour north east of the distillery – with its loamy, clay soils derived from slate and granite.

SHEESTOWN: EDITION 1.1

Irina barley, grown just outside the historic town of Kilkenny, 50km north of the distillery, on an undulating, well-drained, lowland terroir predominantly derived from limestone, by Phil O’Brien, father of one of our distillery staff, Maura.

In addition, a reprise of the original two sold out bottlings, slightly older second editions, has been brought forward to meet demand:

BANNOW ISLAND: EDITION 1.2

The second release from the 2016 distillation of Overture barley grown by Ed Harpur on the extreme southern coast of Co. Wexford, where salt-laden Atlantic winds and sandy soils create a unique, if somewhat challenging, terroir. It was here that the Normans took their first conquering steps in 1169. Sandbanks and wind-blown dunes rise up over a lost town long – faded from the map.

BALLYKILCAVAN: EDITION 1.2

The second release from the 2016 distillation using Taberna barley grown by David Walsh-Kemmis west of the River Barrow in Co. Laois in the barley heartlands, where his fertile fields are sheltered by ancient woodland. David is the thirteenth generation since 1639 to farm at Ballykilcavan. And here, in his ancient farmhouse, sits our inaugural Barley of the Year trophy awarded for this 2015 harvest.

 

Each Single Farm Origin has been matured in a spectrum of fresh, super premium American and French oak.

Bottled at 50% ABV without colouring, chill-filtration or any additives – totally natural – each bottle is priced at €70-80/£70 and will be available from specialist retailers from August 2020 onwards.

9,000 bottles of each whisky will be available throughout Europe, Taiwan and Japan, with totally unique Single Farm Origins coming to the US in September.

Note: previously Ratheadon: Edition 1.1 was redirected from export (as an online exclusive) to the Irish market in order to meet demand. We have therefore bottled another Single Farm Origin – Broomlands: Edition 1.1 – to replace that as our online exclusive this summer.

100% IRISH BARLEY

All of our whiskies use 100% demonstrably Irish-grown barley – one farm, one terroir, at a time.

Following a strict methodology that originates in the greatest vineyards of France, each farm’s crop is kept separate from field to barrel.

Using a mash filter instead of a mash tun, super-long 120-hour fermentations, and exceptionally slow distillations, we aim to produce the most natural and respectful expressions of barley possible.
