In which we go back to the future: to seek out maverick growers who dare to plough their own furrow and pursue alternative philosophies. We ask what organic farming, or the ancient wisdom of biodynamics can offer to the intensity of barley’s flavour. Our curiosity leads us to discover then resurrect rare heritage grains, one variety at a time; and to experience the pungency of real Irish peat for the first time in generations in whisky. With these radical methods we ask the inquisitive, daring drinker to join us on our unorthadox journey towards the frontiers of authentic, uninhibited flavour.

It includes Organic, Biodynamic, Heritage & Peated whiskies.

We are the only distillery in Ireland certified by the biodynamic authority Demeter, as well as the Organic Trust – these partners certify the distillery itself and our whiskies. Approximately 25% of our growers now farm using unconventional organic and biodynamic methods.

ORGANIC

Organics is often defined by what it isn’t: no artificial sprays. But what it is is a way for the soil to recharge its own nutrients. Roots, without a shallow chemical diet burrow deeper, take in a more complex diet. Worms return to the soil, breaking it up, allowing roots deeper still. What does this mean? More complexity in the plant itself; the route, ultimately, to more complex whisky.
