Using 100% Irish barley, widely considered to be the world’s finest, our Single Farm Origin series is an uber-provenance range of limited edition natural whiskies that explore Irish terroir one farm, one place, at a time. They are expressions of precision and rarity, showcasing barley flavours derived from individual Irish farms and harvests.

TERROIR – OUR DIRTY LITTLE SECRET

Terroir is the 3D interaction on the a plat of soil, microclimate and site. It influences how the barley grows and thus the flavours in the grain. Captured farm by farm, terroir requires an extensive logistical infrastructure (the Cathedral of Barley) to verify and prove its existence. Each terroir is a unique starting point for our whisky. By separately storing, distilling and maturing barley from 110 different farms we can create an unparalleled range of flavours for our Head Distiller, Ned, to draw on.

WHISKY TERROIR PROJECT

Preliminary flavor profiling indicates a core flavor across soil series consisting of a malty, nutty, died fruitiness with a lingering clove spice. However, when analyzed separately, these soil series express unique aromas that may be indicative of a broader terroir. Seafield – sandy stoneless drift – exhibited fruity, floral, and grassy flavors with an ethereal sweet taste, Clonroche – fine loamy drift with siliceous stones – exhibited malty, cereal, and grainy flavors with a more robust sweetness compared to Seafield, Elton – fine loamy drift with limestones – exhibited earthy, feinty, herbal flavors with an oily, pepper finish.
