Eco-Chef Tom Hunt tours The Facilitator

In the final chapter of our trilogy with Eco-chef and Food Writer, Tom Hunt, Tom hands his chef’s hat to Head Distiller Ned, who gives him a tour of our own kitchen — The Facilitator that is Waterford Distillery.

They begin in our bespoke entrepôt and Terroir Enabler, The Cathedral of Barley, where Tom discovers how we keep every harvest from every farm separate in its own designated bay, allowing complete transparency and traceability.

Then it’s down to The Facilitator, where Ned walks Tom through the painstaking process of coaxing each terroir into its fullest expression of natural whisky, through our brewing Technological Trinity, week-long fermentations and penuriously narrow cuts from the stills.

Finally, in Ned’s pantry, Tom tastes through a range of Waterford Whisky; from Single Farm Origins, to our rarest and most precious ingredients — Arcadian Heritage, Organic and Biodynamic whisky. Then it’s time to whip up a Waterford Whisky dish as the pair assemble Single Farm Origins together to create a Cuvée Concept, where the whole is greater than simply the sum of its parts.
