The Cuvée Concept, our unique modus operandi, is how we create, naturally, the most expressive, profound & complex single malt, by bringing together Single Farm Origins. In Cuvée ‘Koffi’ we have assembled two dozen to provide our fullest & most generous expression, which sets this pioneering whisky apart. It provides a wide spectrum of flavour, richly textured & beguilingly persistent.

Head Distiller's Observation

APPEARANCE: Amber gold with light like a coral sunrise and thick oils that slowly descend the glass, with a stop or two on the way.

NOSE: Interesting combination of red apple on homemade brown bread, washed down with a cup of tea, delish! Three peel marmalade, white pepper tingle, mixed dry herbs, cola cubes and sherbet sweets, light lavender in fresh soil.

TASTE: Spices gently dancing on my tongue, lemon and strawberry shortbread biscuits, black pepper, grapefruit, chilli chocolate, oyster crackers, barley sugar, summer fruit compote, liquorice allsorts sweets.

FINISH: Long and dry gentle spiciness that lasts and leads to mouth-watering with dried fruits which all meanders on.

Water

Rains that fall on the Comeragh mountains flow via water-bearing volcanic rock fissures creating an aquifer of pure, soft water of ideal mineral balance. The purity of volcanic-filtered water is where our spirit’s journey starts.

POUR YOURSELF A DRAM AND LISTEN TO THE SOUND OF ONE OF THIS CUVÉE'S SINGLE FARM ORIGINS

An overcast summer’s day at Fenniscourt. This track starts out under the trees by the entrance to one of the barley fields. Heading down around the edge of the field, where the quiet is interrupted by the Waterford to Dublin train as it hurtle past on a line that spits the farmland, it’s a brief change of pace. We keep moving along the eastern edge of the field. The breeze picks up a little, blowing through the crop; the hedgerows are still busy and a buzzard flies overhead. There’s a wide headland along the northern edge of the field; the wild flowers here give the bees plenty to do before the rain sets in for the afternoon.
