PEATED – CUVÉE FUMO

Arcadian barley, from our secret garden of delights, explores the natural flavours, intensity & honesty of the old ways. Out of necessity since the dawn of time, peat has been the primary fuel source in rural Ireland, with its sweet pungency familiar to generations gathered around the ancient hearths of thatch-roofed blackhouses. Farmer, & often illicit distiller, dried barley over peat smoke infusing the same heady aromatics, an ancient custom that died out from the 1850s. Cuvée Fumo celebrates the coming-together of barley – both Irish grown & peated – from four Single Farm Origins for complexity, & two distinct harvests for harmony, as we return to the earthy, wild & raw tradition rooted in the distant past.

Head Distiller's Observations

Appearance: Rich gold with unctuous oils.

Nose: Rich, sweet, fireside style of pear, augmented by Demerara sugar. Hessian, oyster shells. Wet limestone. Hemp and tar. Peach skins and russeted apples. All given balance by deep, gristy malt and a touch of polished oak.

Taste: Sweet heather honey intermingles with sackcloth, seasalt and pitch. Charcoal and autumnal hearth. An almost umami touch of hoisin sauce alongside warm hay and savoury spices.

Finish: Lingering, with lanolin and earthy fireside turf.

Waterford Whisky’s intensity of flavour comes from our temperature-controlled fermentations, encouraging a flavour-enhancing malolactic fermentation to provide extra length & depth.

Water

Rains that fall on the Comeragh mountains flow via water-bearing volcanic rock fissures creating an aquifer of pure, soft water of ideal mineral balance. The purity of volcanic-filtered water is where our spirit’s journey starts.

An overcast summer’s day at Fenniscourt. This track starts out under the trees by the entrance to one of the barley fields. Heading down around the edge of the field, where the quiet is interrupted by the Waterford to Dublin train as it hurtle past on a line that spits the farmland, it’s a brief change of pace. We keep moving along the eastern edge of the field. The breeze picks up a little, blowing through the crop; the hedgerows are still busy and a buzzard flies overhead. There’s a wide headland along the northern edge of the field; the wild flowers here give the bees plenty to do before the rain sets in for the afternoon.
