To revel in a more interesting mode of travel, one should seek alternate routes. Our journey may challenge traditionalists for our chosen course is terroir; our desired destination complexity. After traversing the terroirs of Southern Ireland, Head Distiller Ned has layered together a playful collection of Single Farm Origins to create a particularly mellow, fresh & fruity single malt whisky. The ideal travel companion celebrates our much yearned-for passage across the seas.

Head Distiller's Observations

Appearance: Peach with oils and legs that are a nod to ZZ Tops “She’s got legs and she knows how to use them”

Nose: Berry compote, barley sugar, wet fresh cut grass, barnyard, honey wax, peppercorns, rhubarb and custard sweets, fresh green foliage, brown banana, vanilla pods, fresh soil, apple tart and cream.

Taste: Poached pears, Crème Brûlée, malted biscuits, ginger, roasted almonds, spice bomb in the middle, maple syrup, cinnamon, Fudge cake.

Finish: A spice that lasts and get dry and take you on a Voyage!

The Breathing Barrels

A Micro Cuvée is a miniature assemblage of components – both Single Farm Origins and different cask types. Of the latter, each of our distillates matures in a mixture of the best French and American oak, in our nearby warehouse at Ballygarran, right by the sea. It’s Head Distiller Ned’s pantry, chock-full of ingredients with which to make his experimental cuvées.
