WATERFORD WHISKY X LMDW

Roots – Racines – those undersung subterranean heroes; the conduits for flavour itself. In our farm-by-farm unearthing of barley’s natural flavour we reach out, root by root, for the quintessence of single malt whisky and true Irish peat. And through our own roots – our wine inspiration, our connections to the great cooperages of France, our delight in the creativity of Cuvée Concepts – we bring those terroir-driven farm flavours from Ireland to France, in collaboration with LMDW, in this celebratory Micro Cuvée.

Head Distiller's Observations

Appearance: Golden amber with a slight copper tinge with luscious legs.

Nose: A subtle wisp of smoke intertwined with dry earthy undertones, reminiscent of a distant bonfire on a summers evening, green apple, pear, honeycomb, custard,  apricots, digestive biscuits, dried flowers.

Taste: Sweet malty, cough sweets, campfire, dried apricots and sultanas, dark chocolate, liquorice, salted BBQ.

Finish: The peat lingers delightfully, leaving behind a warm, slightly dryness with hints of dark chocolate and salinity.

The Sound of Woodbrook – A Micro Cuvée Racines Farm

This is one of our more unusual tracks, for the fields on which the barley was grown are been wiped from the map. So we begin on a bright, early summer day in South Dublin, to capture what’s left. This track opens up in some woodland at the south end of the field – familiar Single Farm Origin territory perhaps. A stream runs past ahead, and the Dublin road runs north from Wicklow alongside us. All sounds as it should. But as we get closer around the north side of the field, we hear the Excavators and Dumper Trucks that are working: what was once a Single Farm Origin is being turned over into a residential area. Nearby, to the east, golfers tee-off on the course as trains rattle through on the Dublin-to-Wicklow line. We move back around to the south, and closer in again where most of the building work is happening. Nearby we can hear the hedgerows and tree-lines full of life; at least they haven’t changed since barley was last harvested here. The track finishes up on the west side of the old field, where a new entrance, traffic lights and pedestrian crossings have been added. The building work continues beyond, as traffic passes by, north and south.

Yeast

Waterford Whisky’s intensity of flavour comes from our temperature-controlled fermentations, encouraging a flavour-enhancing malolactic fermentation to provide extra length & depth.

Water

Rains that fall on the Comeragh mountains flow via water-bearing volcanic rock fissures creating an aquifer of pure, soft water of ideal mineral balance. The purity of volcanic-filtered water is where our spirit’s journey starts.
