DIE ERMITTLER

A deep dive into the whispering darkness; an investigation that tunnels beneath the very soils of Ireland. That bold spirit of discovery; of things to be revealed, sits at the heart of our quest for natural flavours at Waterford Distillery — a quest we have shared with our German friends Ermuri the Genuss Co. Die Ermittler celebrates that dauntless investigation into unknown places; a rich soulful spirit unearthed from the dark flavours underground. A natural whisky to interrogate with curious friends, & exploring through long evening hours as the shadows lengthen.

Head Distiller's Observations

Appearance: Deep copper colour, with oils that stand still on the glass as if they have nowhere to go.

Nose: Honey, orange peel, fresh dry soil, pear drops, gentle cigar smoke, barley husks, bark mulch, hay, chocolate chip cookies, hemp rope, rose bed.

Taste: Grapefruit, green peppers, walnuts, cucumber, white pepper, chilli flakes, clove sweets, dark chocolate with sea salt, liquorice, roast coffee.

Finish: Dry but chewable with slightly smoked liquorice and spice.

The Sound of Sheestown

We’re standing at the entrance to the fields in Sheestown. Soon the track moves up along the hedgerows, to a wooded area that skirts around the back of the farm. It’s busy here with birds and later bees. The sound of the barley stirring is always present in the background before the breeze picks up a bit. Then we move into the fields and a little closer to the crop for the rest of the track.
