Arcadian Farm Origins explore the natural flavours of days gone by, a taste that time has forgotten. Eschewing the quotidian varieties of today, we are curious to unearth long-forgotten barleys – where natural flavours evolved over centuries in harmony with landscape, soil & climate. We venture back in time to reintroduce the iconic variety Goldthorpe, found as a single, fortuitous mutation in a Yorkshire barley field in 1889. Over half a century later, the pioneering barley breeder, Dr Hunter, declared, ‘It was, & still is, one of the best quality varieties in existence.’ We are proud to present our nearest thing to time travel to a new era of single malt connoisseurs.

Head Distiller's Observations

Appearance: Sunkissed amber hue with legs that looks like pause has been pressed on the rich viscosity.

Nose: Green vegetation, rich granola bar, berry compote, red apple, green tea, bell peppers, melon, roast beef gravy, prunes.

Taste: Sweet orchard fruits, apples and pears, creamy, smooth texture, light spiciness, red berries, honey, hay dust, cloves, raisins, dry barnyard.

Finish: A lingering dry sweetness leave a delicate lasting note of dried fruits and a touch of spice.

The Sound of Donoughmore – Heritage Site

A dry and windy summer’s day at Donoughmore. This track begins inside some of the old stone sheds at the edge of the fields. Time has rendered them open to the elements, but they still give a little shelter. Heading outside into the open, the wind rattles the loose sheeting on a nearby barn, we’re surrounded here by a semicircle of trees filled with busy birds in the afternoon sun. A gap in the trees leads us out into the fields, the wind buffeting the barley as it blows through heading south.

Yeast

Waterford Whisky’s intensity of flavour comes from our temperature-controlled fermentations, encouraging a flavour-enhancing malolactic fermentation to provide extra length & depth.

Water

Rains that fall on the Comeragh mountains flow via water-bearing volcanic rock fissures creating an aquifer of pure, soft water of ideal mineral balance. The purity of volcanic-filtered water is where our spirit’s journey starts.
