BIodynamic Cuvée Luna

Eccentric to some, regenerative to others, Biodynamic agriculture goes beyond the ordinary ecological mindset. Drawing upon ancient lore of lunar cycles & exotic preparations, it seeks to charge soils with vitality & barley with vibrancy. Practised by the most visionary & curious, we too are intrigued about the most natural flavours we can capture in spirit.Now, for the first time, we bring distinct Biodynamic harvests from original Biodynamic pioneers Trevor Harris, Alan Mooney and John McDonnell together in our most profound, esoteric and evocative Cuvée Concept yet.Inspired by the greatest Bordeaux châteaux and Champagne houses, Cuvée Concepts are our most complex and creative single malts. Our oldest vintages of Biodynamic barley – 2018 and 2019 – separately distilled and matured then layered by Head Distiller Ned like a single malt millefeuille. Each vintage brings its own unique characters; a harmony greater than the sum of its considerable parts.

Head Distiller's Observation

APPEARANCE: Golden sunrise on a spring morning over the Atlantic Coast with oils that hold the glass like they want to stay in bed.

NOSE: Green apple, hay, malted biscuits, white pepper, peaches, barnyard, cherry tomatoes, dry soil, light herbal tea, breadcrust, birch.

TASTE: Pepper spice, dry, breakfast cereals, chewable, lemon curd, pesto, green peppers, porridge with cream, malted biscuits, herbal tea, grapefruit.

FINISH: Creamy, gentle spices with dryness that turns herbal and lingers into an Irish goodbye.

The Sound of a Biodynamic Farm at Coilltroim

An early Spring dawn chorus. It’s still dark as this track begins but, around an open area behind the yard where sheep and the first lambs of the year are resting, the hedgerows are already busy. We move away from the yard, through the fields and into a clearing between a young Oak wood and an old Ring Fort. It’s getting lighter now, and a buzzard cruises over the woodland beside us. We circle back toward the yard where the sun is up now, the nearby traffic busier, the birds in full song. The sheep and their lambs are up and about feeding in the field behind.

Waterford Whisky’s intensity of flavour comes from our temperature-controlled fermentations, encouraging a flavour-enhancing malolactic fermentation to provide extra length & depth.

Water

Rains that fall on the Comeragh mountains flow via water-bearing volcanic rock fissures creating an aquifer of pure, soft water of ideal mineral balance. The purity of volcanic-filtered water is where our spirit’s journey starts.
