1ST CUVÉE: PILGRIMAGE

We all have to start somewhere – so naturally we decided to start at the end. Whilst we launched our first Single Farm Origin whiskies commercially in May 2020, individual expressions of a single place captured in spirit, those whiskies in fact stepping stones to something greater. It is a multi-farm cuvée that, eventually, will become our destination. A Single Farm Origin represents a single voice, one terroir, but we intend to get the full choir of farms to sing – for that is the point of terroir-driven distillations. In this way, it gives us a whisky of even greater complexity, as individual base spirit flavours layer on top of each other, like a mille-feuille pastry: a whisky of unrivaled density.

Head Distiller's Observations

Appearance: light copper with a lovely oiliness on the glass.

Nose: Malty, almonds, fresh zest, leather, fresh linen, damp hay, clove spice, orange chocolate, cooked banana.

Taste: Rich mouth puckering oils with a chew-ability, pepper, cherries, sticky dryness, malt, crème caramel, buttery, milk chocolate. The finish reminds me of warm chocolate brownie with vanilla ice cream.
