When a team of revered palates is let loose in a warehouse full of single malt whisky, this limited edition bottling is the result. Creatively, the worlds of gastronomy, oenology & whisky are on different orbits, but once in a blue moon their trajectories cross. Inspired by La Maison du Whisky, Frenchie’s Chef Owner Gregory Marchand & Wine Director Aurélien Massé as well as Waterford’s Head Distiller Ned Gahan were united in a challenge to search for the rarest & most intensely flavoured ingredient in our pantry of maturing spirit: biodynamic whisky. They present us with a fresh, dynamic bottling, rooted in the most natural of flavour as well as true provenance & authenticity, suited for the most hallowed table.

 

Appearance: A chardonnay colour with rich viscous oils.

Nose: Porridge with honey, hay dust, clove, ripe banana, root vegetables, blood oranges, toffee, red apples, stone fruits, melon, liquorice, prunes, barn yard.

Taste: Buttery oils, barley, white pepper, almonds, apricot jam, cloves, ripe banana, green grapes, ginger, Sicilian orange cake, bell peppers, green melon, aniseed, minerality.

Finish: Very long mouth watering with a freshness, nutty, salty minerality, clove and custard.
